Three child-friendly recipes with chia

One reason Chia is enjoying a terrific popularity in our family is probably because it instantly became Zoe’s favorite. And, to be quite honest, that doesn’t happen often with something that’s healthy and nutritious. Flax, another beloved seed with comparable nutritional benefits, has always been greeted with a dose of grumpiness.

I think it’s the playful and jelly-like texture that’s really fun and inviting for the kids. Also, chia has no taste that can interfere with other flavors. Today, I share the three “most favorite” chia recipes that Zoe (my little daughter) and I picked together.

BREAKFAST OATS WITH CHIA

This is quickly turning into my favorite breakfast. If you are trying to revamp your (and your kids’) morning oatmeal, this recipe is for you.

Makes 1 serving

  • 2 ounces steel cut oats
  • 1 tablespoon Chia seeds
  • 1/2 cup milk or yogurt
  • ½ banana, mashed
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon raisins
  • 1 teaspoon pure vanilla extract
  • sprinkle of cinnamon

Combine all ingredients in a small container. Cover, and let it rest in the refrigerator overnight. Savor the wonderfully blended flavors when you wake up in the morning. Yum!

STRAWBERRY CHIA DESSERT

Both pretty and delicious, this fruity dessert will win the heart of your little ones in no time. For best flavors, choose strawberries (organic, if you can) when they are in season. Chia gives this dessert a fun, jelly-like consistency.

Makes 3 servings

  • Juice of one lemon
  • Juice of one orange
  • 2.5 cups fresh strawberries, pureed
  • 6 teaspoons chia seeds
  • 3 teaspoons maple syrup

In a small container, combine all ingredients. Mix well. Divide evenly into 3 glass cups. Let it rest for about 3 hours. Serve at room temperature or chill and serve cold.

LEMON-LIME CHIA DRINK WITH SPURULINA

On lazy Sunday mornings, why not celebrate a new day with this bright green, happy blend? Kids are welcome too!

Makes 1 serving

  • One juicy lemon
  • Juice of one lime
  • 1 teaspoon chia seeds
  • 4 ounces water
  • 1 spirulina tablet, crushed
  • One lime slice to decorate

Peel the lemon as close to the pulp as possible. Cut the flesh into small cubes and remove the seeds. Transfer into a small container, add lime juice, water and spirulina. Process with a hand blender for a few seconds. Add chia and stir well with a fork to combine. Let stand for 30 minutes.

To serve, pour into a martini glass and decorate with a slice of lime. Cheers!
